When you live alone cooking dinner isn't a high priority (yes, I know I have a roommate, but that doesn't really count). Cooking for one, well, kinda sucks. Most of the time you are left with a ton of leftovers - and who wants to eat the same thing five days in a row? Even if you do cut down a recipe to make only one or two servings it still takes as long to make as though you were making the full recipe. Spending an hour cooking dinner just to sit down alone on your couch to eat while watching a rerun of Bones is sort of depressing.
Unfortunately when you avoid cooking dinner you don't eat all that well (or at least this is true in my case). I found myself either running out and grabbing fast food or just snacking my way through the evening. Neither which are good for you.
There is one other thing that has held me back from cooking - I'm, well, hmmm. . . I'm afraid of meat. Meat freaks me out. I don't mind ground beef or sausage, but the rest of it, well, it just bothers me.
So this year I decided that I am going to face my fear of meat and I'm going to cook more at home. Last night was my first attempt, and I'm proud to say I passed with flying colors. I made a peppered roast pork tenderloin and broccoli with cheese sauce (I did cheat on the cheese sauce though). It was totally edible, yummy even - and I was only mildly freaked out by the pork before it was cooked.
